Lindores Abbey, a Lowland distillery and the site of the first recorded distillation of Scotch whisky, is back, showcasing their 'Casks of Lindores' series. This limited edition series of three whiskies showcases the Lindores spirit in the three distinct cask types that make up their core range release, the MCDXCIV.

This, the Wine Barrique Edition, is the second in the series - fully matured in STR (shaved, toasted & recharred) red wine barriques. Bottled unchill-filtered at 49.4% abv.

 

Official Tasting Notes:

Colour: Dark chestnut.

Nose: Mellow fruity apricot jam, toffee notes and a hint of cinnamon combined with butter and custard.

Palate: Sweet and spices. Mellow plums and red berries, treacle, cinnamon spice and a pleasant woody smoky note. Very smooth, silky texture.

Finish: Medium to long with spices, honey and caramel notes.

 

Lindores Abbey has roots in Scottish distillation dating back to the 1400s, being officially recognised as the site of the first recorded distillation of Scotch whisky. In 1494 King James IV commissioned Brother John Cor at Lindores Abbey to make aqua vitae with eight bolls of malt. Now, once again, they are producing whisky as one of the few currently operating Lowland distilleries. The distillery operates with a focus on sustainability and the heritage of the land surrounding the abbey. Use of Kingdom of Fife barley, long fermentation and their 'sister' still setup all contribute to the distillery's balanced and flavourful spirit.
