The Cognac Cask Matured is a vatting of 32 Cognac casks sourced from Tonellerie Bossuet (France). The 2023 limited edition sees the heavily peated spirit spend its full maturation in Cognac casks for a minimum of six years. During its maturation, the spirit has captured the herbaceous, sweet spice from the Cognac casks which balances out a citrus-fruit led spirit, allowing the maritime Kilchoman peat smoke to subtly shine through.
Official Tasting Notes:
Nose: Herbaceus fresh fruit, subtle sweetness and peat smoke
Palate: Toasted oak, sweet fresh fruits, cinnamon and nutmeg
Finish: Crystalised ginger, and citrus oil with lingering light smoke
Founded in 2005, Kilchoman was the first new distillery to be built on Islay in over 124 years. Anthony Wills, Kilchoman Founder, set out to resurrect the grass roots tradition of farm distilling. Since then, they have become a well renowned distillery.
