Only Hygo's local rice - Yamada Nishiki - is used for this sake. A beautiful balance between aroma, texture, and flavour. Very low temperatures are used throughout the main fermenation, resulting in a very aromatic sake. Apricots leap out the glass, with a character of steamed rice and balanced umami and acidity leading to a clean dry finish.
Pairs with: marinated and grilled pork or lamb dishes.
