Heartwood - founded by Tim Duckett - is arguably Australia's most lauded independent bottler, having bottled a number of Tasmanian whiskies in the modern industry's formative years. Known for his unorthodox techniques of blending casks, beating his whisky with a paddle, rolling casks into the sun-exposed "hot box" of his warehouse - some Heartwoods are considered by whisky lovers to be amongst the best Australian whiskies ever released. Likewise, Tasmanian Independent Bottlers is an independent bottling, driven by the team behind Heartwood. Casting their net beyond their home state, TIB bottles accessible single malts and spirits from across Australia. Avoiding the natural cask strength tendencies of Heartwood (which have topped 70% in the past), TIB releases are generally offered between 46% and 50% ABV.

 

Hobart Whisky

Established in 2015, Hobart Whisky is producing single malt at Devil's Distillery in Moonah, about five minutes north of Hobart's centre. A family-owned enterprise, headed up by Distillery Manager, John Jarvis and Head Distiller, Ben James. Brewing and fermentation occurs on site before the wash is distilled in a 1800L Knapp Lewer copper pot still, designed by Tasmania’s own Peter Bailly. From their inception the team has focused on aging in large-format ex-Bourbon American Oak casks. This style of maturation requires a larger time commitment than most, however, the results have been truly delicious!

 

Sullivan's Cove

Established in 1994 Sullivan’s Cove is one of the oldest ‘modern’ whisky distilleries in Tasmania, and Australia. Under the direction of Patrick Maguire since 1999, It has become arguably the best-known Australian whisky distillery globally having won Worlds Best Whisky and Worlds Best Single Cask Whisky multiple times.

 

That Boutique-y Whisky Company (TBWC)

That Boutique-y Whisky Company are part of the Atom Brands independent bottling group. They have bottled most distilleries in Scotland and are increasingly expanding to include whiskies (and rum) from around the world. Their limited edition labels are designed by Emily Chappell and reference interesting elements (or in-jokes) about the distillery. They share an ethos with us that whisky is meant to be fun and that whisky is for sharing.
