"Miyoshino Jozo was established in 1912, and the current Toji is Terukai Hashimoto, who returned to the brewery after studying at Tokoyo Nodai, Japan's foremost academic instituion of brewing studies. After starting work in 2006, we progressed to toji in 2009 and fouses primarly on yeast, which he believes gives the best representation of the local environment.
Natural Selection is a new project from Hashimoto-san. Brewed twice a year, each batch is allowed to ferment with indigenous yeast and no temperature control, allowing the ferment to finish naturally. This version shows vibrant fruit and acidity with a long finish.
