Part of G&M's well loved Connoisseur's Choice label, this 2007 Caol Ila is an absolute classic. Bottled in 2021 at 14 years old, it encapsulates the distillery's peppery, meaty smoke side incredibly well, making for an indulgent, classic Caol Ila.  It was aged in refill Sherry and bottled at natural cask strength of 58.4%

Official Tasting Notes:

Nose: STEWED RAISINS combine with CURED MEAT notes and GINGER SPICE. TREACLE TOFFEE comes to the fore alongside rich BAKED APPLE and sweet SMOKE.

Palate: WHITE PEPPER gives way to LEMON ZEST and toasted ALMONDS. Roasted COFFEE BEANS lead to notes of RASPBERRIES.

Finish: A full and long finish with CITRUS FRUITS and lingering BONFIRE EMBERS.

Gordon & MacPhail is one of Scotland's oldest and most respected independent bottlers and have one of the broadest and deepest collections of maturing Scotch whisky.

Caol Ila was founded in 1846 on Islay's East coast, next to Port Askaig. The distillery was demolished by current owner, Diageo, in 1972 and rebuilt with a massively increased capacity; making it the largest producer of single malt whisky on Islay. Despite receiving the same spec of malt, from Port Ellen Maltings, as Lagavulin, Caol Ila's distillation regime produces a lighter, less phenolic spirit. Their spirit is described as coastal, gently smoky, grassy, floral and fruity.
