"Dassai Shochu is made by distilling Dassai sake lees, fresh of the day. Because of the way it is made, we can't produce as much as we would like, but it allows us to keep the clean aromas of Dassai in the shochu. The alcohol content is set at 39% because we believe it brings out the aromas better this way."
