Bimber London Single Malt Whisky
London-located Bimber began production in 2016 with the first release in September 2019. The distillery places a strong emphasis on their single farm-grown barley, which is floor malted at Warminster Maltings.
A slow fermentation takes seven days and though the stills were designed to maximise copper contact and create a light whisky, the fact they are direct-fired means their new make holds its structure. This, with early spirit cuts, produce a light, fruity and aromatic new make.
