“A vibrant and fresh expression of Cabernet with a profile of tobacco leaf, touch of jalapeño and blackberries. A small percentage of Cabernet Franc and Malbec to round the wine out and add extra layers. With the addition of a little new oak which adds cedary notes. For the Barossa, this Cabernet focuses on freshness and an old school style back from the late eighties. An homage to the classic clarets.

A 10 day ferment in stainless steel fermenters, which is fully destemmed. Fermented in small stainless steel vats are the Malbec and Cabernet Franc. 10% new french oak from centre of France forests produced in the Cognac region, a very light toast as to not impact the fruit, elevage was for about 14 months and then bottled. A small amount of sulfur added just before bottling. The Cabernet is sourced from a small vineyard nearby in Vine Vale with 50 year old vines. Light and fresh with the old vine complexity.”
