“Pale, with a subtle copper hue. Spicy grapefruit pith, rosewater; a mesh of citrus, herbs and white musk exotica. The palate has pleasing slip and texture derived from extended skin contact and fermentation in old oak with full solids, blended then finished in a large Slavonian oak foudre; layers of delight, freshness and aromatic complexity abound.
Hand picked Vermentino (75%), Black Frontignac (15%), Riesling (5%), Zibibbo (4%), Savagnin Rose Aromatique (1%). All varietal portions seeing time on skins. Maceration length ranges from overnight for Riesling and Black Frontignac parcels, 6 days for the Vermentino and several weeks for the Savagnin Rose and Zibibbo. All pressed with no additions, contributing a natural fining of the juices through gentle oxidation. Unfined, unfiltered; with sulphur dioxide was added just before bottling.”
