The 2021 edition of Wolfburn’s Father’s Day Limited Release, which arrives in very small quantities into Australia.
A run of just 980 bottles worldwide, this was created from second-fill ex-bourbon quarter casks that had matured in Warehouse #1.
Nose: Sweet fruit fragrance meets fresh sea air. Zest of lemon and lime is also present, and just a gentle hint of peat smoke.
Palate: Hints of grapes and honey are overlaid with soft hazelnut and oak. Wolfburn’s classically floral flavours abound, augmented with hints of dried fruit and cinnamon.
Finish: There’s a surprising sweetness at the end, with hints of toffee and brown sugar coming to the fore. Traces of peat smoke remain to give a beautiful lingering finish.
Wolfburn is located in Thurso and was originally founded in 1821. Details are scarce but its production is believed to have been intermittent at best and likely non-existent during the period from 1850s-1870s. Reduced to ruins, a private company revealed plans to rebuilt the distillery in 2012 and spirit ran off the stills at Wolfburn once again in January 2013 after some 150-odd years of silence.
