Produced from the 2016 harvest of Organic Irish barley, the Gaia 2.1, named after the primordial goddess of mother Earth, is rich, and visibly oily on the edge of a glass. Notes of fresh citrus and corner store lollies make this whisky a superb experience. 50% abv.

Palate: orange peel, fresh soil, bread crust, brown sugar, milk chocolate, fresh fruit salad, fig roll biscuits, lavendar, sweet marshmallows, buttermilk

Founded in 2014 by Mark Reynier, of Bruichladdich fame, Waterford is a progressive Irish distillery with a focus of grain driven spirits, highlighting terroir, high quality barley, and experienced distillation. They began distillation in 2016 out of a retired Guinness brewery, and have grown their repetoire to include many single farm expressions, and a Cuvée concept series inspired by the methods of French wine regions.
