“Preserved lemon, lanolin and spice, the Chenin Blanc deepens with nutmeg and christmas spice on the nose, and carries through to the palate. It has a tight and focused acid line with lovely richness and a touch of cedary oak. If in the company of time, it’s recommended to open this bottle an hour or so before to get the full expression of this wine.Â
Sourced from one of the most northern blocks in Clare Valley. The Chenin vineyard is around 60 years old and is practiced organically. It was picked around 11.0 baume and whole bunch pressed to 2nd use acacia and Slovenian oak puncheons and mix of large format oak Foudre. The fermentation took about 16 days to ferment on lees with full malolactic fermentation as well, and left in oak until January before it was racked and a small amount of sulphur added before bottling.”
