“Cherry, blackberry and fennel tips, brambly, grippy drying tannins, raspberry acidity. This one is elegant and proper like. We really really like the vines, people and ultimately the flavour. In saying that we changed the winemaking in 2022. There is a reason/intention. Stay tuned.
75% de stemmed over 25% whole-bunch fermented on skins for 13 days, gentle cap wetting. Pressed to various sized old french oak. Racked glen off lees twice to retain fruit purity.
