The Red Mill Gold Rum is the ultimate expression of the Red Mill vision – a blend of Red Mill Rums aged in beautiful casks from around the world. It’s a balanced, elegant and delicious Rum – a gentle column distillation, elevaged in a suite of casks selected and blended in April 2024 – including ex-Pinot Noir, white Bordeaux, Oloroso Sherry, Cognac (Actually, Mistelle..) and others.
The result is a bright, golden, delicious Rum that is perfect for sipping or mixing.

Substrate: Refined dark cane sugar crystal from the Northern Rivers of NSW
Fermentation: Winemaker’s PDM (Chardonnay) and Fusion (Pinot Noir) yeasts. ~96 hours of fermentation of ~7.5% yield.
Distillation: Column still distillation with rectification of ~78%
Elevage: ~30 months elevaged and then blended from barrels
– 50% Australian Pinot Noir
– 25% White Bordeaux (Graves)
– 10% Oloroso Sherry
– 10% Mistelle Sherry
– 3% Cognac
– 2% Quarter Cask

Red Mill Rum was one of Sydney’s original rum distilleries back in 1933, with spirit sourced from the CSR distillery in Pyrmont. It was founded by George Fesq, and has now been resurrected by his great Grandson, David Fesq.
