The reserve Nebbiolo is only made in years where conditions and fruit are perfect. This is a complex wine with great depth and power. Aromas of spice, red liquorice, earth and leather lead to a savoury and layered palate with subtle cherry, spice and chocolate characters.
The fruit selected is grown on the highest vineyard site (350 meters above sea level). The vineyard was planted using a new clone, Nebbiolo 230. Only the best bunches of grapes are harvested for this wine. They are crushed and de-stemmed into small fermentation vats and inoculated with a Barolo yeast which allows maximum varietal characters to come through. The fermentation reaches 30 degrees C for 4-5 days; the wine is then lightly pressed and transferred to new French oak barrels where it ages for two years.
