The standard Junmai Daiginjo from Kochi Shuzo, Presented in their signature blue bottle designed and named after the nearby Niyodogawa river from whose clear waters this sake is made. Produced using Gyohyakumangoku rice and Kochi’s own CEL-24 yeast, this sake is soft, sweet, and delicate, with very classic notes of melon and strawberries alongside a hint of grapefruit. Side-by-side with the 40% semai buai CEL-24 release, it’s amazing just what a difference the rice can make. Pair with light pastries and desserts light basque cheesecake or daifuku. Serve chilled.
