“Fragrant and delicate, this wine is not what you might expect from a Central Victorian Cabernet.
A cool autumn meant slow ripening, which gave us some welcome flexibility in picking. An early harvest component has provided a crisp freshness, and fruit picked three weeks later added ripeness and mature tannins without too much alcohol.
Fermentation was in separate small batches by wild yeasts in open vats. The wine was gravity bottled under Diam corks after 15 months in old French oak, with no fining or filtration, and just a touch of sulphur.
It is a lovely gentle wine that is drinking nicely as a young wine now, and will rebalance and evolve with cellaring.”
