After the success of our ‘Pinche’ agave spirit came into focus a natural progression towards distilling wine, with the guidance of close friend Shane Casey (head distiller at Brix, Surry Hills). ‘Put shit in, get shit out’, was the underlying message of Shane – so a 1300L of base wine was produced for the sole production of high-end spirit.Â
Wild fermented with no adjustments in neutral French oak, the resulting wine was then double pot distilled and bottled by hand. Only 350 bottles made.
