“Hand harvested just down the road from the winery and immediately pressed to tank. Fermentation occurred naturally in a mix of new and neutral French oak. The ultimate drawcard for Beechworth is the decomposed granite – providing structure and power in Chardonnay without sacrificing balance or freshness. I am humbled and honoured to have been steward for this wine. The ultimate blend is 25% oak, with partial malolactic and no bâtonnage. More citrus than stone fruit. Lime curd, almond kernel and a hint of spice with a long, stoney palate.”
