Description

A clean and dry kabosu-shu from Oita producers Jyotokura, known for their high-end mugi (barley) shochu and limited releases. Kabosu is a citrus local to Oita Prefecture, closely related to yuzu but visually more similar to a lime. It has a very distinct flavour and aroma, and while it’s often used in a culinary setting to flavour sauces and vinegars, it pops up in kajitsushu (fruit liqueurs) from time to time. 

A little sweeter than Jyotokuya’s yuzushu, but still very much on the dry side for its style,  this product shows great elegance in its aroma and falvour. The ‘all oita’ aspect of this refers to location of production: everything in this product, from the shochu to the fruitto the glass of the bottle, comes from Oita Prefecture.

A strong recommendation for use in cocktails, and and amazing pairing with Kilpatrick oyters.
