“Old vines Sémillon, about 80 years old, from Jeff Traeger’s organically farmed vineyard
in Vine Vale, East of the Barossa. There the vines grow on deep sand over clay soil with optimum diurnal temperature. The Grapes are picked by hand & the whole bunches are tipped into a stainless tank to
undergo a week of carbonic maceration. The bunches are then foot-stomped to release the juice & stop the carbonic effect on the aromatic. The tank is then closed until pressing three months later.
Once pressed the wine is transferred in old French barrique to undergo 8 months of elevage without ouillage & bottled on site in our Basket Range winery without any fining nor filtration.”
