The tenth release in Glenmorangie’s Private Edition series, the Allta has been created with the distillery’s own yeast strain.
The Private Edition series is a collection of experimental distilling methods and maturation regimes and is one of the first times a majoe Scottish distillery has looked to highlight the impact of yeast during fermentation.Â
Allta is Scottish Gaelic for “wild” and this strain grows on the barley that Glenmorangie use for their whisky.Â
The initiative of Dr Bill Lumsden, Director of Distilling and Whisky Creation, he found the yeast – Saccharomyces diaemath - clinging to a particular barley field and brought them together at the distillery.
The result was a fragrant new make, which showcases biscuity notes alongside citrus, vanilla on the nose after maturation. The palate is quite sweet and there’s a surprisingly grounded nature to the finish. Â
