The vines are grown organically.
The grapes macerate gently for a gentle extraction of aromas and tannins. Fermentation takes place in vats, then the aging takes place in barrels with the least amount of new wood possible so as not to mark the wines. A drop of sulfur is added before putting into bottle to preserve the purity of these wines.
