The Côteaux des Corvées is where you want to grow Trousseau. A sun drenched slope of Eboulis Calcaires over Marne du Lias. 80+ year old vines of the increasingly rare “Trousseau à la Dame” variety which has small, loosely-knit clusters. Harvested by hand and de-stemmed via crible in the vineyard. Natural fermentation with indigenous yeasts and maceration without the addition of SO2. Aged in old Burgundy barrels. No filtration or fining with a touch of sulphur at bottling.
Ticks every box if you are a Trousseau fan. Seriously good with all the subtle elements of Jura I love. Bigger yet nimble with a lip smacking acidity which all comes together for a fantastic, and very drinkable wine.
