“One of the great Australian Chardonnay’s! Whole bunch pressed to tank for overnight settling. Transferred to French oak, of which 25% were new. Full, natural, long and slow fermentation in barrel. Matured for 12 months in oak and a further 3 months in tank to resettle on gross lees. Full malolactic. No filtering, just a small SO2 addition. Citrus zest and stone fruit on the noes with a wave of mineral and savoury complexity. The palate is full and slender at the same time. Round edges with a core of laser like acidity. Awesome.”
