Balcones distillery was founded in Waco, Texas in 2008 and has been at the forefront of the exploding craft distillation scene there ever since.

As always, we bring out the best in our ingredients through traditional double distillation in hand-built copper pot stills. The result of our unique cooperage program, consisting of a variety of oak species and multiple toast profiles, is a bold and robust rum with rich deep fruit flavors, with viscous and warm notes of vanilla and caramel. This is a rum to excite both the rum purist and the committed whisky drinker.”

Founded a year ago by Ray (of Webster’s Bar) and Simon (of New Sydney Hotel), Barrel & Batch Whisky Co-Op is exactly what the name suggests; a group dedicated to sourcing and selecting incredible single barrel (or batch) whiskies from around the world and making them available to their co-op members each month.
