Founded in 1902 by Yataro Saito and now managed by the fifth-generation oresident, Kotaro Saito, the Saiya Shuzouten is a hidden gem in the sake world. The focus of the brewery is using their own in-house yeast and milling rice properly. They were the first sake brewery to be approved as organic by ASAC.
Saiya Shuzoten's signature Junmai Ginjo. Made from snow melt water and Akita Sake Komachi rice grown by brewery workers themselves.
