While still inheriting the traditional taste and blending of ingredients, they brewed the sake rice of Hida Homare of Gifu Prefecture.
Yamada Shoten brewery who produces sake in an ultra-handcrafted and traditional style. 'Mukashi No Manma' translates to 'unchanged since the beginning'.
A classic style of sake with earthy flavours and touch of smoke, aromas of cocoa and clove, notes of orange blossom and tangerine. The high polishing rate gives this sake defined fruit and floral expression while still offering rich umami from the highly flavorful local hida homare rice.
The classic taste with a clam scent is excellent with meat dishes, as well as dishes using miso (seasoning) which are local to Gifu.
