This one took some time to make. Four years of aging on fine dry cider in Tasmanian Pinot Noir barrels. Meticulous blending wtih traditional bittersweet cider apples. Extended ageing on yeast lees prior to disgorging. We'd say it's almost fancy.
A savoury, textural cider displaying balanced oak, toast and roasted nuts. Drink as an aperitif and use a champagne glass if you can find one.
