A fruity but dry sake from Wakatsuru brewery.
This Oyamanishiki is a junmai (made with no added alcohol, only rice water and koji) and although the rice is polished to below 60 percent, the producer have not specified this as a ginjo.
A drier style, there’s still a lot of fruit on the palate.
The rice is polished to 55%.
Best served chilled or room temperature and matches with rich dishes.
