A premium daiginjo sake from Wakatsuru brewery that is both elegant and dry.
The Daiginjo Sohin is a junmai (made with no added alcohol, only rice water and koji) daiginjo (a super-premium sake where the rice is milled to below 50 percent of its original size).
Wakatsuru have gone all the way down to a polished level of 38% to make this as delicate as possible. It is quite dry.
Best served chilled or room temperature and matches with rich dishes.
The Wakatsuru brewery is located in the Tonami city of Toyama on Honshu, Japan’s main island.
