A fantastic blanco tequila made at El Pandillo, one of our favourite tequila distilleries.
Holding the 1579 NOM, El Pandillo soure mature blue weber agave from high altititude locations, giving their end product a beautiful natural sweetness to balance the herbal notes.
For Volans, the agave are cooked in a stone oven for 22 hours and crushed by tahona. Double distilled through pot stills.
The blanco uses three sources of water: rain, 450 foot well and spring water and the tequila is oxygenated and aerated.
Clean and crisp on the nose, with a gentle vegetal agave note. Citrus and minerals too.
The soft sweetness comes through on the palate, with a creamy texture.
Volans is a family owned business that began after families based in Idaho, USA, and Jalisco, Mexico, were joined through marriage. With a shared love of tequila, plans to start their own partnership saw them form a relationship with El Pandillo in 2016.
