2016 refers to the harvest date of our neighbour's Morello Cherries (January 2016 to be precise!) and the whole cherries, once harvested, are immediately placed in oak barrels with spontaneously fermented farmhouse ale and fermented/matured for two-years. Once decanted, the spent whole cherries go to our still (and we'll offer you that one year well into the future!) and the resultant brilliantly blood-red ale is left to settle, mature, refine and integrate for a further 18-months before bottling.
Yep, this beverage is one-month shy of a remarkable 4-years-old at release ... and, behold, you will both smell and taste the benefit of that long slow fermentation, maturation and slow, loving care. We are thrilled with this product; it is unique, delicious and so utterly perfect for Christmas!
