Tamazakura is located in the mountains of Shimane. This Saké maker is very small, and run by two brothers. For a very long time this Saké was only consumed by locals. From 2013, this Saké maker has become popular and now available all over Japan.
In 2015, Sakenet began importing Tamazakura Saké. Australia is the first country outside of Japan to be selling Tamazakura Saké.
This sake is kimoto (traditional) method made. Kimoto is the process where the sake brewer's allows nature to take its course. Brewer's patiently wait for the lactic acid (instead of adding it) to naturally occur within the shubo (fermentation starter) to fight off unwanted bacteria.
Enjoy this sake at room temperature or warmed.
