Batch 110 of Sullivan's Cove's famous Double Cask single malt.
Whisky from ten different casks went into this batch, ranging in age from 7 to 20 years. As well as whisky from several American oak ex-Bourbon casks, this batch also contains whisky from both American and French oak casks, which have been previously used for either Tawny, white wine, or red wine.
DC110 is the first Double Cask release to be bottled at a variable ABV, whereas previous releases were bottled at 45%. By tailoring the ABV for each batch of Double Cask, Sullivan's Cove are able to choose an ABV that brings out the best in the whisky. For DC110, that was 46.9%.
Head Distiller, Heather Tillott, has this to say of the release:
"The higher ABV% has really brought out the deeper chocolately vibes so quintessentially Sullivans, while retaining the malt-fruit-brine fundamentals of the distillery. Great depth of aroma and a very enticing flavour profile."
Offical Tasting Notes:
Pineapple lumps and glacé ginger, cocoa and cigar box. A wonderful entry of aromas! Horlicks (that condensed milk-vanilla malt thing). A musky floral note, orange peel, gingerbread, creaming soda and epic fudge with a touch of treacle. All with an olive on top.
Great body and rolling texture. Loads of biscuitty malt, a jammy wave (dark berries!) swirls with a herbal wave, like vine leaves. Incredibly fudgy, chocolate flavoured. Part way through there's a change toward the fruit: peaches, mango, apricot, and then ruby grapefruit juice.
Malt biscuits GALORE. Choc-orange. Stonefruit, grapes, melon and pineapple waves increase toward the end, and then it's a wonderful finish of fennel honey and chocolate fudge.
