The pinnacle of the celebrated Redbreast core range, this 21-year-old is a rare opportunity to try old Irish single pot still whiskey.
Irish pot still whiskies are a unique classification to the country whereby both malted and unmalted grains are added into the mash. The practise comes from the historical practise of avoiding high taxes placed on malted barley and results in rich, spicy, resinous whiskies.
This has been matured in a combination of first-fill sherry and first-fill bourbon casks, although it is the sherry casks that you notice first across the nose. Rich dried fruits build an alluring aroma, one that evolves with time in the glass.
The palate shows its maturity, classic pot still creaminess with rich fruits, vanillas and gentle oak mingling with that enduring sherry nuttiness. Those same spices help the finish linger pleasingly.
A classic of the style that’s all-too rare sometimes given the plaudits and awards it tends to attract.
