Soft, delicate, fruity, and floral, one could easily mistake this shochu for a ginjo genshu sake. Melon, pair, and anise on the nose, flowing through to steamed rice, macadamia and peaches. Very slight umami on the palate with lemon curd, vanilla bean and jasmine, complemented by a pleasant bitterness on the finish. A very approachable shochu, great for those new to the style.
Pair with:
Aburi scallops or similarly torched sashimi
Light crustacea such lobster or blue swimmer crab
Vietnamese summer rolls
