The Signatory Vintage Unchillfiltered Collection is one of our favourite ranges from any Independent Bottler. Providing an incredible range of whiskies at prices that remind us of how things used to be, they almost always outperform comparative releases from the same distilleries which their spirit originally came from in both quality and price…
This release, from an unnamed Orkney distillery (Which we know isn’t Scapa…) is a glimpse into the past, when it wasn’t necessary to add runes and decorations to bottles… This bottling, a vatting of casks #DRU 17/A67 20 & 22, sees that iconic Orkney spirit aged 13 years in Hogsheads before being vatted, and bottled at 46% abv. Almost refreshingly, the spirit shines through in this release, providing that classic sea spray and light smoke.
Tasting Notes:
Nose:Â Creamy shortbread biscuits freshly baked, castor sugar, sea spray, slightly floral, lemon peel and toasted oak.
Palate:Â Coastal saline, sugared almonds, orange zest, floral, a hint of smoke with vanilla and peppery spice.
Finish:Â Long with black peppercorns, summer berries and orchard fruits.

Signatory Vintage are one of the veterans of Independently Bottled Scotch Whisky. Founded in 1988 by Andrew and Brian Symington. The name ‘Signatory’ was derived from the initial intention to find a person of suitable standing to sign the labels for bottles drawn from a single cask.Â
