Tasting Notes:
Nose: Sour cherries, malty, dark chocolate, hints of raspberry with some spicy oak.
Palate: Cherries, raisins, floral notes of heather, white chocolate, hints of red fruits and freshly cracked black pepper.
Finish: Medium to long, dried dark fruits with cinnamon, oak and spicy notes.
Founded in 1825, Ben Nevis is an old-fashioned and historic distillery. It’s single malts have cult status but having being owned by Nikka since 1989 (who reopened it after four years of closure in 1990) between 50 and 75% (depending on who you ask) of it’s annual new make output is shipped to Japan for their blends, particularly Nikka Black. Ben Nevis uses wooden washbacks and, unusually, brewers yeast for fermentation. A slow distilaltion process leads to a complex and heavy spirit that can be green, tropical, dieselly and/or chewy on different occasions.
Signatory Vintage are one of the veterans of Independently Bottled Scotch Whisky. Founded in 1988 by Andrew and Brian Symington. The name ‘Signatory’ was derived from the initial intention to find a person of suitable standing to sign the labels for bottles drawn from a single cask.
They have one of the most well regarded stores of single cask Scotch Whisky in the industry, with a focus on high quality spirit, bottled without the need for Chill Filtration, always at natural colour. Signatory covers the entire range of whisky drinkers, with their high end Cask Strength Single Casks offering complex and rare whiskies at the high end, while their Unchillfiltered Collection provides some of the best value single malts and grains around.
