Pente de Maimbray is an excellent choice to accompany your seafood delights such as lobster, fried scallops but also as an aperitif and with all your goat cheeses!
The domains vineyards require special attention in order to capture the full potential at time of harvest. The many parcels and their respective exposures favour different maturities. The grapes ripen slowly in the late season (October). After picking the grapes, the juices are vinified at low temperatures in small tanks to keep each plot isolated. The intervention is minimal during the fermentation and the aging to protect the full potential of the terroir. The Pente de Maimbray is bottled before the summer following harvest.”
