The grapes are subjected to temperature control by being placed in a cold chamber at 5ºC. Destemming and whole grape maceration before pneumatic pressing. Must separation. Static racking. Fermentation at controlled temperature. Ageing on fine lees for 6 months. Stabilisation in stainless steel until reaching sufficient maturity for bottling. Ageing in bottle in our winery until optimal moment of commercialisation.”
Quinta Couselo
“In the 12th century, the Cheira farm was cultivated by the local
Cistercian monks as they promoted the distinct characteristics of
the O Rosal Valley for vine growing. Fast forward a few hundred
years and we now know the Cheira farm as Bodega Quinta
Couselo, one of the oldest wineries in Rias Baixas, producing wines
since 1864.
Typical pergola Albariño vines surround the winery and they
grow Caiño Blanco and Loureira on a unique plot of slate soil,
all within the O Rosal sub region which borders the river Miño
and the Atlantic Ocean. This maritime influence, along with cold
macerations and lees stirring, imparts stunning salinity and texture
to the wines.”
