“The Montepulciano d’Abruzzo is a deep ruby red wine. On the nose the hints recall ripe blackberry fruit. Then spicy notes followed by leather and undergrowth. On the palate the progression is powerful and snappy, the tannins are excellent and the persistence is long.

The Riserva pairs very well with lamb, goat, pecorino cheese, game and with all the plates of the culinary tradition of the inland of Abruzzo.

The Riserva is from a vineyard in the western hills of Peligna valley, 400 metres above sea level with very rich clayey soil with white calcareous stones and vines aged over 25 years. 100% organic Montepulciano d’Abruzzo grapes were destemmed and crushed, with spontaneous fermentation in stainless steel without temperature control. Maceration lasted 12 days, after which the skins were lightly pressed in a basket press.

Aging at Praesidium is particular, playing with the push/pull of reduction and oxidation.  The first 24 months of aging are in stainless steel; the second 24 months are in wood, 95% of which is large Slavonian oak cask and 5% is French tonneaux. 25% of the wood was new. This wine is not filtered or pasteurized, it only undergoes natural decantation. Sulphites are added in considerably lower amounts than the maximum allowed for organic certification.”
