We created a blend of 100% spontaneous beer from two-year-old and three-year-old barrel stock. We then hand-processed several hundred pounds of plums grown in the Texas Hill Country and added them to the blend.

The plums had a nice depth of flavor and a bright acidity. On top of that we added Petit Verdot grape must from Washington to the blend as well. We then let the beer and fruit combination referment to total dryness. Unfiltered, unpasteurized and 100% naturally conditioned.
