Jean Bouteille ‘Bastion’ Trousseau 2024

“Single vineyard Trousseau aka Bastardo in Spain from Small Fry certified organic & biodynamic vineyard in Vine Vale, Barossa Valley. Farmed by the expert hands of Wayne & Susie Hilder, they replanted two blocks of 
Trousseau with cuttings from their Old vines material present on the farm with deep sand on clay soils. 
The Trousseau showcase tight bunches with perfumed & complex aromatic. 
We hand-picked the Trousseau before it underwent a 7 days long carbonic maceration. The bunches got foot stomped & genteelly punched down once a day for another 10 days before pressing toward the end of primary fermentation. Elevage in Bourgogne barriques for 9 months on fine lees. Hand made & bottled on site in our Basket Range winery without fining nor filtration.”
