We’ve really been enjoying the drops from Hayashi Honten recently, who have been absolutely nailing their sake in terms of spec and depth of flavour… which is exactly what you want when you’re after high end Daiginjo. A personal favourite of ours when trying our way through the range.

An inscription on the bottle reads: “After the Second World War, a native Kakamigahara Kabuki actor named Hyakujuro donated 1200 sakura trees to the city as a memorial to those who lost their lives. His trees were planted along the Sakaigawa River in the middle of Kakamigahara. These trees are now called and are visited by over 20,000 people every year.
