Chief’s Son’s Stuart and Naomi McIntosh have been distilling since 2012 in the Mornington Peninsula. They use Australian barley and predominately mature in American oak ex-apera (Australian sherry) casks. Many of their releases carry the 900 moniker, which references 900 years since the formal establishment of the McIntosh family. The Scottish Gaelic translation of the name means Son of the Chief, which is where the distillery takes its name from, also.
