50% of new oak, selected for their origins and with a slow and deep barrel burning. 50% % in one-year-old oak barrels, as carefully selected as the first ones. Barrel ageing lasts more than 18 months in order for the wine to blend with the wood. At the end of the maturing process, the wine is not racked so as to preserve the fruit in the wine and to retain its freshness and youthfulness. The fining is carried out with fresh egg-white. This wine is not filtered.
