The hue of a misty dawn over Byron Bay. The palate reveals soft charred oak, lemon meringue, and roasted nuts, intertwined with delicate smoke, hints of white peach, gingerbread, and shortbread.
Cape Byron Distillery was founded in 2016 after a fateful conversation between Eddie Brook and whisky industry legend, Jim McEwan. The Brooks family have spent the last 34 years planting tens of thousands of subtropical rainforest plants, rehabilitating the Byron hinterland. Upon learning of this and the rich array of local botanicals Jim’s passions were stoked and it marked the beginning of the Cape Byron Distillery; a sustainable, B-Corp certified distillery, which captures the terroir and character of the rainforests of the Northern Rivers region. Since then, they have released the highly successful Brookie’s Gin range, and at long last 2022 marks the release of their inaugural single malt whisky.
