We crushed burnt cane from the 2023 Sweet Days, Hot Nights cane cutting competition in Home Hill, then fermented it with our signature yeast blend. Distilled and rested in a re-charred ex-bourbon barrel for two years, this Distillers Edition is initially only available to guests of this year’s Sweet Days, Hot Nights festival — a special memento to commemorate the spirit of the event.
This was one of our favourite rums to come to the Sydney Rum Fair!
Tasting Notes
A nose of peach, vanilla and Anzac biscuit. The aromatic palate has subtle honeyed spice with a woody undertone. The finish is long, smoky and incredibly smooth.
